Black eyed peas and collards soup

 Happy New Year! Hopefully, 2021 will be kinder to everyone than 2020 was. 

Because I’m not ataking chances, black eyed peas, collard greens, and corn bread were on today’s menu.these all represent prosperity, which I could sure use in 2021. 


Black Eyed Pea and Collard Soup

4 slices bacon, cut up
4 sliced ham, cut into squares
1 T minced garlic
Thyme, oregano, onion powder, celery seeds, red pepper flakes to taste (approx ¼ t each)
1 can chicken broth
1 can black eyed peas, drained and rinsed
1 pkg prepped collard greens (10-16oz)
1 T apple cider vinegar 

In 3qt instant pot, sauté bacon until nearly crisp. Add ham, garlic, and seasonings and cook until fragrant. Deglaze with chicken broth, then stir in peas. Put collards on top, pushing down so they aren’t above top of pot. Put lid on, seal, and cook on high pressure for 35 min. NPR until all steam is released. Stir in vinegar, adjust seasoning, and serve with corn bread.
